Introduction

Makes a large quantity of lentils, to be served warm or cold. Freezes well. Makes a large quantity of lentils, to be served warm or cold. Freezes well.
Number of Servings: 10

Ingredients

    1/4 cup soy sauce
    1 large bay leaf, whole
    1/2 cup vegetable oil
    3/4 cup honey
    1/2 cup cider vinegar
    1/2 tsp powdered ginger
    4 cups water
    3 cups lentils (green lentils work best)
    chopped parsley for garnish

Directions

Mix together all ingredients except lentils and water in a 4 quart pot. Add lentils and water. Bring to a boil then simmer until lentils are just ender, about 1 1/2 hrs. Remove bay leaf and stir.

Can be served hot, room temperature or cold. Freezes well.
