Ingredients

    1 red onion (about 2 cups), diced
    1 red or yellow bell pepper, seeds removed and diced
    5-6 ears of fresh corn (about 5 cups), corn kernels removed from cob
    3/4 cup celery (about two stalks), diced
    2 banana peppers, seeds removed and diced
    1/4 teaspoon salt
    1 teaspoon cumin seeds
    2 teaspoons mustard seeds
    1 cup cider vinegar
    1 tablespoon flat-leaf parsley or cilantro, chopped

Tips

Almost any fruit or vegetable can be turned into a relish by pickling it with an acid such as vinegar and then cooking it.


Directions

Combine all ingredients into a large saucepan. Place saucepan over moderate heat and cook, uncovered, until the mixture reaches a simmer. Cook for 20 minutes or until all but 1/4 cup of liquid is remaining in the saucepan. Stir in parsley or cilantro.

Cool then pour into storage containers, seal and refrigerate for up to 3 weeks.

Makes 12 one half cup servings.

    One craves for spicy things, which we call "chat-pata" in India -- which is why we tend to go in for fast food. It hink this is an excellent recipe to dip into a snack without adding unwholesome calories.. satisfies your tongue, and serves your purpose... - 8/10/10

    Sounds very good. One question: Should the instructions have read to cook until 1/4 cup of the liquid remains, rather than cooking until the liquid is, in effect, reduced by 1/4 cup? - 6/28/11

    made July 4th - didn't have banana peppers so used a small can of jalapenos plus didn't have mustard seed, so used prepared mustard. - 7/4/11
