Introduction

Amazing summer salad. Would be great served over lettuce or with grilled shrimp. Amazing summer salad. Would be great served over lettuce or with grilled shrimp.

Ingredients

    6 cups diced seedless watermelon
    1/2 cup chopped fresh cilantro
    1 cup dry roasted salted peanuts
    1/8 tsp cracked black pepper
    1/2 tbsp minced fresh ginger
    1 clove minced fresh garlic
    1/4 cup seasoned rice vinegar
    1/4 cup watermelon juice (i use a reamer on the rinds)
    1/2 tbsp sesame oil
    1/4 cup extra virgin olive oil
    1/2 tsp light soy sauce

Directions

Combine watermelon, cilantro, and peanuts in a large bowl.
Wisk together remaining ingredients in a small bowl.
Add dressing to watermelon mixture a little at a time, tossing to coat.
Chill at least 1 hour before serving.
