Introduction

great for dinner in a hurry great for dinner in a hurry
Number of Servings: 8

Ingredients

    1 lb skinless boneless chicken breast, bite size pieces
    1 c cooked brown rice
    1/2 c salsa (add more to your own taste)
    1 can drained diced tomatoes (or just use more salsa)
    1 shallot
    1 tsp cumin (more or less to your taste)
    2 cups corn or if fresh of the cob is 3 ears
    1/2 tsp lime zest
    juice of half the lime
    2 cans drained and rinsed black beans
    1/2 c mexican cheese

    **we have bean eaters but you can always use more rice and less beans to you own taste"

Directions

cook chicken with some non stick cooking spray
add shallot, cumin, lime zest and juice cook 1-2 minutes
add all remaining ingredients till heated thru and serve
makes approx 8 1c sevings
can also be served on a shredded bed of lettuce for a salad, on a tortilla or topped with sour cream

    Incredible!
    Easy and yummy, I had a ham, cut chunks and used that instead of the chicken, used 2 cups of brown rice, and served it with more cheese on top, avocado chunks and tortilla chips. Like having a warm bean and corn salsa dip with chips. - 1/5/14
