Introduction

Easy and quick to make. Very filling! Great for eating on the run breakfast if you skip the salsa. Easy and quick to make. Very filling! Great for eating on the run breakfast if you skip the salsa.

Ingredients

    1 La Tortilla Factory Smart & Delicious Multi-grain Soft Wrap,
    1/2 cup Egg Beaters or liquid egg whites
    1 Laughing Cow Baby Bel Light, or 1 oz other reduced fat cheese, shredded
    1 T Hormel Bacon Bits, 1 tbsp
    1/4 cup Ore Ida Potatoes O'Brien

Directions

Use two non stick pans - In one add bacon bits and potatoes and let heat up for about 2-3 minutes, or until potatoes are warm. Add egg beaters, turn once and turn off heat (will keep cooking). Turn heat on for other pan. while warming up, shred baby bel (I use and egg slicer). Put tortilla in pan, and as soon as one side is warm, flip and put shredded cheese on top. Continue heating for another 30 seconds or so. Slide onto a plate, and add egg/potato mixture. Add salsa if desired, and roll up to eat. Makes 1 serving, although can easily be multiplied for additional servings.
