Introduction

I love this with a big old salad. It is my weekend lunch when I am home from work relaxing. I love this with a big old salad. It is my weekend lunch when I am home from work relaxing.

Ingredients

    1 lb of Bantry Bay mussels ( or 200 calories of frozen mussels)
    1 tomato, finely diced
    3 tbsp tomato paste
    1 oz. sundried tomatoes, diced
    1 onion, diced
    2 garlic cloves, finely chopped
    1/2 yellow pepper, diced
    freshly chopped parsley or basil

Directions

Heat a large pot with a few sprays of Pam. add the garlic and chopped onion and cook for a few minutes. Add the tomatoes, tomato paste, sundried tomatoes, yellow pepper and continue simmering. Empty contents of a 1 lb pouch of mussels into the pot and cook on high for 3-4 minutes, with a lid on top. reduce heat and simmer for 3 minutes with occasional stirring until all mussels are fully opened and hot through. Sprinkle with basil or parsley and serve immediately.

You can accompany it with whole wheat pasta, or do like I do, and have a salad on the side. Sometimes I get a piece of crusty bread and dip it too!
