Introduction

This is a wonderful substitute for that time when you just can't fight off the craving for Chicken Enchiladas! Easy to make and very nice with a salad and some salsa! Number of Servings: 6

Ingredients

    1 Can Chicken Breast, drained
    6 Corn Tortillas, medium (approx 6" dia)
    1 Can Cream of Chicken Soup (10.75 oz)
    1 Can Pinto Beans
    1 Can Tomatoes, canned, with green chilies
    1 Cup grated Low fat Cheddar Cheese

Directions

Mix Soup, beans and tomatoes in a bowl and set aside. Begin layering in a 9x12 glass baking dish, in this order:

Soup mixture, then 2 tortillas, then 1/4 cup cheese. Continue layers, until everything is used (top the mixture with the last 1/4 cup cheese.

Bake at 375 degrees, until bubbly and lightly browned (appx. 25 minutes).
