Ingredients

    2 Can cannellini beans (15.5 ounces each) drained and rinsed
    3/4 Pound Baby zucchini, trimmed and quartered
    4 Ounces green beans , fresh, Trimmed and thinly sliced on the diagonal (3/4 cup)
    2 ounces FRESH parmesan cheese crumbled (1/2 cup)
    1/2 Cup FREESH basil leaves torn
    Grated Zest and juice of 2 lemons
    1 Tablespoon olive oil
    Coarse sald and ground pepper

Directions

The magic of this dish is that everything except the white beans is FRESH. Substitute white beans for the cannellini beans if you must but don't make it your first choice.

    This is good - but not my favorite mix of flavors. I think if I made this with balsamic vinegar instead of lemon for the acid, I would like it better. - 8/10/13
