Introduction

Since my Bariatric Surgery, I've been trying to find recipes with the highest protein value along with extra nutritional value as well. I found out that dried peas (which turns into legumes) has an extrordinary amount of protein, more so than its cousin the legume. Number of Servings: 12

Ingredients

    3 cups of dried split peas
    1 lb of diced up ham steak
    3 stalks of celery, chopped fine
    3 carrots, chopped
    3 cubes of chicken boulion
    1 large onion, minced

Directions

Soak split peas in water over night. Rince the peas when you are ready to cook and add enough water to the pot to cover peas, 2 inches above (approx 3 quarts), add boulion. Simmer for 2 hours. Add ham, onions, celery and carrots. Simmer for another 1- 2 hours until all vegetables are tender and peas turn to mush. Season with salt and pepper to taste.
