Ingredients

2 cups cooked, short-grain brown rice
2 cups chopped fresh parsley
1/2 cucumber, peeled & chopped
1 huge tomato, chopped (that's all I had, you should add more)
4 green onions, chopped
the juice of 1 medium lemon
2 Tbsp olive oil
pepper
sea salt
Directions
Cook rice as directed.
While rice is cooking, chop other ingredients.
Mix lemon juice, olive oil, salt and pepper with cooked rice, set aside. Add all other ingredients and mix. Adjust seasoning to taste. May want to add lemon juice. If possible, add liquids to rice while it's warm.
