    1/4 C Smart Balance Light Buttery Spread
    1/2 C packed brown sugar
    1/2 C egg beaters
    1 C plain yogurt, lowfat
    1 C raw carrots, grated
    1/2 C flaked coconut
    1/4 C raisins
    1 1/2 C wheat flour
    1 tsp baking soda
    1 tsp ground cinnamon


Cream Smart Balance & brown sugar. Add egg beaters & yogurt; beat well. Stir in carrots, coconut & raisins. Combine flour, soda and cinnamon; stir into creamed mixture just until moistened.
Fill greased or paper-lined muffin cups 3/4s full. Bake at 375 degrees for 20 to 25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack to cool. Serve warm or store in sealed container.
Yield: 1 dozen muffins.
