CHICKEN PARMIGIANA INGREDIENTS
4 boneless, skinless chicken breasts, each cut in two
Salt & pepper, to taste
1/2 cup plain yogurt
1/2 cup whole-wheat bread crumbs
2 Tbsp. butter, melted
Marinara sauce*
1/2 cup shredded mozzarella cheese
1/4 cup shredded Parmesan cheese
*MARINARA SAUCE INGREDIENTS
1 clove garlic
1 tsp. dried oregano
1 1/2 tsp. dried parsley
2 cans diced tomatoes (15 oz. each)
1 can (6 oz.) tomato paste
1/2 cup dry red wine
1/4 cup olive oil
1 tsp. sea salt
Dash pepper (fresh ground)
2 tsp. sugar
1/4 cup extra virgin olive oil
1/2 onion, diced
1/4 cup diced green pepper
Directions
1. Preheat oven to 350.
2. Place yogurt and bread crumbs in two shallow dishes or pans. Sprinkle both sides of chicken breasts with salt and pepper. Dip each breast in yogurt to coat on both sides, and then in bread crumbs. Place on cookie sheet.
3. Drizzle melted butter all over chicken pieces. Bake for 45 minutes.
4. While chicken bakes, prepare marinara sauce (below), and allow to simmer on stove top.
5. After 45 minutes, remove chicken breasts from oven and set aside. Spoon half of marinara sauce into a 9x13-inch baking pan. Place chicken on top. Spoon the remaining marinara sauce over the chicken and sprinkle evenly with cheeses.
6. Bake an additional 15-20 minutes.
MARINARA SAUCE INSTRUCTIONS
1. Place garlic, oregano, and parsley in food processor and process until finely chopped. Add tomatoes, tomato paste, wine, sea salt, pepper, and sugar; process until smooth. Set aside.
2. Heat olive oil in large skillet over medium heat. Add onion and green pepper, stirring to coat. Cover and cook for about 2-3 minutes, until onion is clear and tender.
3. Add processed tomato mixture; stir well to combine. Cover and simmer 10 minutes before using in recipe.
