Introduction

I adapted this from a Weight Watchers recipe to increase the fiber in the pancakes. These are light and fluffy - my kids love them! I adapted this from a Weight Watchers recipe to increase the fiber in the pancakes. These are light and fluffy - my kids love them!
Number of Servings: 6

Ingredients

    1 cup whole wheat flour
    1/2 cup white flour (or any other kind)
    3/4 tsp baking soda
    3 large eggs, separated
    1 tbsp honey
    1 3/4 cup buttermilk, low-fat or fat-free (I used low-fat for the nutritional info)
    1 tbsp oil

Directions

Combine flours and baking soda in large bowl. Separate eggs - beat egg whites until stiff peaks form and set aside. Combine egg yolks and honey. Add to flour mixture. Add buttermilk and stir until well combined. Fold in egg whites.

Spoon scant 1/4c batter per pancake - cook over medium heat until tops are covered in bubbles. Flip and cook 2-3 minutes more.

Makes approximately 18 pancakes, 3 per serving.
