Ingredients

    2 TBSP olive oil
    1 chopped large onion
    1 medium eggplant, chopped
    1 large zucchini chopped
    1- 8 ounce pkg mushrooms sliced
    mini peppers chopped red, yellow, and orange about 2 cups
    1 large can Muirs organic tomatoes
    1 small can tomato paste
    garlic, basil
    2-3 cups water

Directions

saute veggies and garlic in olive oil add tomatoes and tomato paste and sufficient water to get desire thickness of stew. Cook until vegetables are done. Serve hot or cold
