Introduction

This recipe uses very little added oil, by cooking the aubergine in the microwave you don't have to fry it and therefore it won't soak up loads of oil as it cooks.

Alternatively, use extra lean beef mince instead of lamb mince and stir fry with 1 Tbs of olive oil.

To make this recipe even lighter, use lean beef mince, which you can fry in 1 Tbs of olive oil.

Ingredients

    1 small onion finely chopped
    500 g lean beef mince
    1 tsp cinnamon
    1 tsp all spice
    2 cloves garlic finely minced
    1 large eggplant
    400 g raw potatoes
    230g tin of tomatoes (400g if you prefer)
    1 tsp fresh thyme
    1 tsp fresh oregano
    salt and pepper
    150g fat free yoghurt
    1 egg
    50g grated fat free/ lighter cheese

Directions

Boil the potatoes until tender, slice thinly.

Prick the aubergine and cook in the microwave for 3 - 5 minutes

Meanwhile, fry the mince on a high heat (no need to add oil). When fried, stir in the spices and herbs. Season with salt and pepper.

Spread half the meat mixture on the bottom of an ovenproof dish, top with sliced potatoes, spread the rest of the mince on top of this.

Slice the cooked aubergine and arrange this on top of the lamb mince.

Mix together the egg, yoghurt and cheese. Spread this over the top of the aubergine.

Bake at 180˚C for up to an hour – or until the top is nicely browned. Serve with crusty bread.
