Introduction

Ingredients

    8 oz Pita Chips
    4 oz Feta Cheese
    4 oz Monterey Jack Cheese
    1 oz Pitted Kalamata olives
    1/2 cup Cherry Tomatoes
    1/2 cup Fire Roasted Red Peppers
    1 tbsp (divided) Olive Oil
    Pepperoncini to taste
    fresh oregano to taste
    2 cloves garlic

Directions

Mix roasted red peppers with 1/2 tbsp olive oil, fresh oregano and garlic. Let sit in fridge for at least 30 minutes
Heat oven to 350 degrees
spread chips in a single layer and sprinkle on both cheeses. Place in oven for about 10 minutes until the cheeses melt.
Then add the other toppings, then add the roasted pepper salsa on top and enjoy!

    My fiance and I really enjoyed these nachos! It was a little difficult to make, though, because there really were no measurements to go by, but I managed to make something really yummy! - 7/20/10
