Introduction

Good fiber/low carb/low glycemic bread for diabetics. Kind of taste similiar to brown bread but not as sweet. Add nuts, raisins, apples or even pineapple as an option. Ingredients

    1 c whole wheat flour
    1/2 c oat flour
    1/2 c flax meal
    1/8 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1.5 tsp cinnamon
    1/8 c ground stevia leaf
    2 eggs
    2 tblspns light cream
    1/2 c canola oil or other oil
    1 tsp vanilla
    1 cup grated zucchini

Directions

mix all dry ingredients together
mix the remaining ingredients together
add mixtures together
place in 1 greased and floured bread pan
bake 45 -60min in 350 oven
