Ingredients

    5 cup filtered water/veggie stock
    1 1/2 c Forbidden Black Rice
    1 tsp sea salt
    6c filtered water or veggie stock
    2 c polenta
    1 c coconut milk
    1/4 c sundried tomatos
    1 tbl basil, italian parsley- minced
    1/2 tsp thyme, oregano, sage, rosemary- minced
    2 tsp sea salt

Directions

makes about 10 servings

1. Bring 5 c water to boil in 3 qt pot, add black rice and 1 tsp salt, cover and simmer on low until liquid absorbed- about 60+ mins, stir occ

2. While rice cooking, bring 6 c water of stock to boil in 3 qt pot. Reduce heat to simmer, whisk polenta into pot, add coconut milk and wisk until liqud absorbed and polenta smooth. Add remaining ingredients.

3. Preheat oven to 350. When black rice finished, pour into well greased 9x13 inch casserole pan- allow to cool slightly. Pour olenta mixture on top. Bake until golden brown- approx 10 mins.

Serve as main course with Roasted Red Pepper Sauce (see recipe)

You can add any other veggie to polenta too- shitake mushrooms, peppers, onions- chooped finely.
