My mom makes a squash medley with only 3 squashes and I've always felt it needed something. The apples, onions It's a naturally sweet vegetable dish. Ingredients

1 Butternut squash peeled, seeded and cubed
3 yellow squash, chopped
3 zuchinni, chopped
2 med. onion chopped
2 apples (preferably Fuji) chopped
2 tsp Cinnamon
2 tsp Nutmeg
1 tsp Cloves
1 tbsp Rosemary
1 tsp Thyme
3 tbsp Olive oil
3 tbsp white wine OR unsweetened apple juice
Directions
Preheat oven to 475 degrees.
Chop all the vegetables and apples, place in a large bowl. Sprinkle on the seasonings, add olive oil and either the wine or the apple juice. Toss together.
Spray a nonstick onto 2 large, shallow roasting pans. Pour veggie mixture in a single layer the pans. Place in oven and roast for 40 minutes, stirring several times.
Makes at about (12) 1 cup servings (I think, it's never lasted long enough for me to measure).
