Introduction

details.asp?nutrition_id=10185824 I changed it up just a tiny bit by using boneless skinless chicken breasts instead of thighs and cutting the olive oil in half! It cut out an additional 21.4cal and 3.6g of fat.

Number of Servings: 2

Ingredients

    1 whole boneless skinless chicken breast, cut into chunks
    1 tbsp extra virgin olive oil
    *Greek seasoning
    1 tsp oregano, dried or 2 tbsp fresh
    4-6 cloves of garlic, minced
    1/2 tsp fresh cracked black pepper
    juice of 1 lemon
    1 tsp lemon zest

    * not included in nutritional info as I was unable to find. Sorry!

Directions

Souvlaki:
In a large bowl, coat the chicken with the Greek seasoning, rubbing it into the pieces very well. Combine all other ingredients together in a separate bowl, then pour over the seasoned chicken, coat well. Cover and set in fridge to marinate at least 1 hour but the longer the better.
Place on skewers and grill over low heat until the juices run clear.

You can serve the souvlaki with pita, red onion slices, lettuce, tomatoes and tzatziki sauce if you like. Although these are not counted in the nutritional information.

Serves 2

Note: Prep time includes the marinating time of one hour for the chicken.
