Ingredients

    1 T Extra Virgin Olive Oil
    1/2 C Diced Red Pepper
    1/2 C Diced White Onion
    3 Cloves Diced Garlic
    24 Oz Boneless Skinless Chicken Breast, Cubed
    2 14.5 Oz Cans Chicken Broth
    1 28 Oz Can Diced Tomatoes
    1 C White Wine
    1 1/2 C Long Grain White Rice, Uncooked

Directions

In a dutch oven, sautee' onion, red peppper and garlic in oil until onion is translucent. Add cubed chicken and cook until pink color is gone from chicken. Add chicken broth, diced tomatoes, and white wine and simmer for 20 minutes. Add rice and return to simmer. Cook for 15 minutes or until liquid is absorbed. Makes 8 1.5 cup servings.
