Ingredients

    3 chicken breasts, boneless and skinless, approx. 4 ounces each.

    1 egg, beaten

    6 oz whole wheat spaghetti

    italian style shredded cheese, couple pinches, no more than 1/4 cup

    3/4 cup Panko crispy bread crumbs, Italian style

    6 tbsp grated parmesan cheese

    italian style pasta sauce of choice. 1/4 cup for each piece of chicken

Directions

Preheat oven to 375 F.

Beat 1 egg.

Combine bread crumbs with half of the Parmesan cheese, mix well.

Coat chicken pieces, then dip in bread crumbs, covering to desired coating.

Place chicken in glass baking dish sprayed with non stick coking spray.

Bake 25 minutes or until chicken reaches 160 F inside thickest part.

Remove from oven and place 1/4 cup pasta sauce on each piece, then top with pinch of italian style cheese and 1 tbsp, if desired, Parmesan cheese.

Return to oven for additional 10 minutes or until internal temp reaches 170 in thickest part.

While chicken cooks, bring water to boil and cook 6 oz whole wheat pasta. Drain and serve as desired.

Makes 3 generous portions.
