Introduction

Ingredients

    1 ½ Tblsp oil, sunflower
    1 ½ c onions, chopped
    1 c summer squash, grated
    ½ c carrots, grated

    1 c orange juice
    2 Tblsp lemon juice
    1 c water

    1 c long grain rice

Directions

Saute onions, squash and carrot in oil, about 10 minutes.

Add liquids, bring to a boil.
Add rice, bring to a boil again.
Turn heat down to low.
Cover allow to simmer until rice is tender.

  • Made this last night and I loved it. I added a little lemon sea salt and black pepper and two cloves of garlic. I wasnt sure if the orange juice needed to be fresh or from concentrate so I used fresh and threw in the pulp too. - 4/1/10
