Introduction

A nice salad that makes a light main course. A nice salad that makes a light main course.
Number of Servings: 8

Ingredients

    2 cups cooked rice
    2 cups diced ripe tomatoes
    2 small dill pickles, minced (hot pepper ones are really good!)
    1/4 cup olive oil
    juice of half a lemon
    2 oz grated asiago or romano cheese
    1 tin of tuna in water, drained
    2 hard cooked eggs, cut in wedges
    2 Tbsps fresh basil cut in thin strips
    1 Tbsp dry parsley ( or fresh if you prefer)
    salt and pepper to taste.

Directions

Toss all ingredients together in a bowl except for eggs. Decorate the top of the salad with the egg wedges. Eat at room temperature or chill completely.
