very flavourful and incredibly moist without any salad oil! This is my mothers favourite carrot cake recipe, i make it every year for her on her birthday. Ingredients

    2 cups whole wheat flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    2 tsp cinnamon
    1 tsp allspice
    1/2 tsp cloves
    1/4 tsp nutmeg
    2 cups splenda
    4 eggs
    2 cups grated carrot
    1 cup pineapple, crushed and drained
    1/2 chopped walnuts (or other nut)
    1/2 cup unsweetened coconut
    1 1/2 cups unsweetened applesauce

    sift first 4 ingredients and add spices
    add sugar, applesauce and eggs
    mix well
    blend in carrots, walnuts and pineapple
    bake at 350 degrees F for one hour in a greased a floured angel food pan

Directions

cuts into 12 good sized pieces
