    1 1/2 CUP OATS
    1 1/2 CUPS BUTTERMILK(OR DAIRY FREE CHOICE) (UNSWEETENED ALMOND MILK)
    1 CUP OAT FLOUR
    1/2 CUP RICE FLOUR
    1 TBSP BAKING POWDER
    1/2 TSP BAKING SODA
    1/8 TSP NUTMEG
    2 EGGS
    1/2 CUP MELTED BUTTER (OR SOY MARGARINE) ( I CAN'T BELIEVE IT'S NOT BUTTER LIGHT MARGARINE)
    2 TBSP HONEY
    1/2 CUP SLIVERED DRIED FRUIT (OPTIONAL)

Directions

MAKES 1 1/2 DOZEN

1. PREHEAT OVEN TO 400. GREASE MUFFIN TINS.
2. SOAK OATMEAL IN BUTTERMILK.
3. COMBINE REMAINING DRY INGREDIENTS, AND ADD WET INGREDIENTS, INCLUDING OATMEAL MIXTURE.
4. STIR IN DRY FRUIT SLIVERS AND FILL MUFFIN TINS THREE -QUARTERS FULL.
5. BAKE FOR 25 MINUTES OR UNTIL TOPS ARE GOLDEN BROWN AND CENTER IS SET.
