Introduction

Yummy and easy to make dinner that is high in protein and very filling! Leftovers taste even better for some reason. :) Yummy and easy to make dinner that is high in protein and very filling! Leftovers taste even better for some reason. :)

Ingredients

    Yukon gold potato (better flavor)
    Onion
Seeds of Change Organic Tikka Masala sauce
    EVOO
Edens Organic Garbanzo Beans (only company in US that doesn't use BPA in their cans)

Directions

Chop up potato and onion. Add EVOO to Wok, and sweat onions for a 30 secs. Add potato. Keep on low for about 30 minutes while you make rice in rice cooker or in pot on stove.

When potatoes are soft, open can of garbanzo beans and rinse thoroughly (cuts down on the farts later!). Add whole can to the wok. Add 1/3 to 1/4 C of Seeds of Change organic Tikka Masala sauce.

Simmer for 5 minutes, and serve on brown rice.

Sometimes I also add tomatoes or cauliflower or garlic - add any other veggies that are in the fridge and need to be used. But those aren't included here calorically.

The calorie count is correct, but this is 3 servings, not 1. I couldn't figure out how to make it say 3 servings, so when I make it and record on SP, I just say .3 serving for tracking.
