Ingredients

2 cups white rice (Uncle Ben's is best)
3 Cups Water
1/2 pound Chourico (Portugese sausage) Mild or Spicy
1 medium Onion
2 celery stalks
1 green bell pepper
3 tsp minced garlic
4 tbsp olive oil
2 tbsp tomato paste
3 tsp ground cumin
black pepper to taste
Directions
Chop the following ingriedents into small pieces (onion, celery, green pepper)
Chop Chourico (or any sausage) into cubes.
Heat olive oil in large pot.
Add chourico to oil and cook for 2 minutes, stiring frequently.
Reduce heat to medium.
Add onion, celery, peppers and garlic. Stir frequently for 5 minutes until vegetables are soft.
Add can of stewed tomatoes and allow to simmer for 5 minutes.
Add rice and water to pot and stir.
Cook according to package.
When rice is cooked let sit with tight lid for 5 minutes.
After 5 minutes remove lid and stir.
Let stand for another 10 - 15 minutes to allow liquid to evaporate.
Makes 10 -12 1/4 cup servings
