Introduction

Light and sweet. Good fiber, protein and calcium. Can be stored in refrigerator for days. Store yogurt mix separate from topping mix. Use a different fruit everyday. Light and sweet. Ingredients

    Parfait:
    2 cups greek yogurt, plain
    1 cup coolwhip, regular
    1 packet of knox gellatin
    Juice of half a lemon plus zest of whole lemon
    1/3 cup splenda
    2T Biggest Loser Protein powder
    5 cups chopped or sliced fresh fruit, any kind
    Topping:
    2 cups oats
    1/2 cup coconut
    1 cup nuts (any) chopped medium to fine
    1/4 ground flax seed
    2T. wheat germ
    3T. brown sugar
    2T. butter
    2 oz. baby prunes

Directions

Parfait: Dissolve gelatin in 1/4 cup water according to directions on box. Set aside. Mix yogurt, cool whip, splenda and protein powder to combine. Add lemon juice, zest and room temperature gelatin to yogurt mix. Beat several minutes. Store in refrigerator and cool completely. Remove and mix once more.
Topping: Combine all ingredients into large skillet. Toast on cooktop for maybe 10 minutes or until lightly brown. Stir frequently.

Serve: Cut up 1/2 cup any fruit, top with 1/3 to 1/2 cup yogurt mix and 1/3 to 1/2 cup topping. Yum!!!
