Introduction
This is a very easy, quick tuna salad. It's my bf's favorite. :-) I think it'd be a good recipe for kids and outdoor parties, too. Especially since it doesn't have icky things like celery. Ingredients
-
1 16 oz. can of tuna in water
.25 cup of mayonnaise
1 tbs italian salad dressing
.25 cup shredded sharp cheddar cheese
7-10 rosemary Triscuits
Directions
Heat oven (toaster oven) on broil. Drain the tuna and add mayonnaise and a salad dressing, mixing well. Taste to check flavor and texture and adjust the ratio to your liking. Arrange Triscuits on a an oven-safe plate or small baking sheet. Spoon (or fork) small balls of tuna salad onto each triscuit. Sprinkle with cheddar cheese and place in oven. Remove in approximately 5 minutes. The cheese should be melted and beginning to brown. Serve immediately. Makes 2 large servings.
The tuna can also be eaten unheated as a dip with triscuits or pita chips. Or spread tuna on bread, top with cheese and place in the oven. Add toast on top and you've got a delicious tuna melt!
