Ingredients

Onions, raw, 1 large
Lamb, Cubed, 2 lb
Apricots, dried, 1 cup, halves
Prunes, dried, 1 cup, pitted
Garlic, 3 tsp
*Pumpkin Pie spice, 1 tbsp
Salt, 1 tsp
Pepper, black, 0.5 tsp
Bay Leaf, 0.25 tsp, crumbled
*Kroger Clear Chicken Broth Fat Free Less Sodium, 2 cup
Tomato Paste, 1 can (6 oz)
Sweet potato, cooked, baked in skin, without salt, 3 medium (2" dia, 5" long, raw)
Rice Select whole wheat pearl couscous, 1.98 cup
Directions
1. Mix onion, lamb, apricots, prunes, garlic, pumpkin pie spice, salt, pepper and bay leaf in a 4 qt or larger slow cooker. In a bowl, whisk broth and tomato paste until combined; pour into slow cooker. Nestle whole sweet potatoes into stew.
2. Cover and cook on high 5-6 hours or 7-9 hours on low until lamb and potatoes are tender.
3. Remove potatoes with a slotted spoon to a cutting board; discard bay leaf. Cut potatoes into wedges.
4. Prepare couscous as package directs; serve with stew and potatoes.
