Ingredients

    8 slices whole-grain bread
    1 packet of sunkist light albacore tuna in water
    1/3 cup roughly chopped drained oil-packed sun-dried tomato halves
    1/4 cup sliced ripe olives
    3 tablespoons low-fat mayonnaise
    2 teaspoons capers
    1/4 teaspoon freshly ground black pepper
    4 romaine lettuce leaves

Directions

Spray bread with extra virgin olive oil cooking spray (or brush each side with olive oil) and lightly toast in skillet. (Or you can put bread in toaster if you would prefer to not use any olive oil spray.)

Combine tuna and all other ingredients (except lettuce leaves). Place 1 lettuce leaf on each of 4 bread slices. Top the lettuce evenly with tuna mixture, and cover with remaining bread slices. Serve immediately.

    Very Good
    I made this with canned chicken and it was very good. Although, I wasn't how many oz. of tuna (chicken) to use because they come in many sized. I happened to use a large can of chicken and the texture seems to work out well. - 4/19/09
