Introduction

This is a delicious salsa, great for inviting friends over to share! This is a delicious salsa, great for inviting friends over to share!
Number of Servings: 10

Ingredients

    1.5 cups corn
    1.5 cups pinto beans
    1 can diced tomato (no salt added)
    1 medium onion, chopped
    1 T lime juice
    chopped garlic to taste (I used 1 tsp)

    Season to taste:
    cumin
    black pepper
    oregano
    basil

Directions

Combine all ingredients into a medium sauce pan and bring to a boil. Boil for about five minutes and then remove from heat.

You can serve this hot or cold, it is good both ways.

You can dip chips or vegetables (cucumbers work well because you can sort of scoop with them)

Makes about 5.25 cups (depending on the size of your onion, you may get 5.5)
And this will serve around ten people, depending on how much they like salsa and how hungry they are.
That's about 1/2 cup per person (a little more than that)
