Introduction

Better than any canned tomato sauce, chunky vegetable sautee is quick, easy AND tasty!! Better than any canned tomato sauce, chunky vegetable sautee is quick, easy AND tasty!!

Ingredients

    Chop or Dice the following ingredients:
    1/2 large onion 1 clove fresh garlic
    2 stalks of celery 2 carrots
    2 large, red, ripe tomatoes

    You will also need:
    a carton of fresh, sliced mushrooms
    2 whole wheat english muffins-toasted
    4 slices of mozzarella cheese
    1 T of olive oil
    1 t sp. basil
    1 tsp. oregano

Directions

Place 1 Tbsp of olive oil in a pan over medium heat. Add garlic. Heat until toasted, lightly brown, (1-2 minutes)
Stir in mushrooms and onions. Cook until onions are clear.(3-4 minutes)
Add celery and carrots. Stir and cover until carrots and celery are cooked, yet firm.(4-5 minutes)
Add in tomatoes, stir and cover until tomatoes are heated through..(5-6 minutes)
Sprinkle with oregano and basil.
Split english muffins, toast and place on four plates
Add one slice of cheese to each muffin half.
Place 1/2 to 1 Cup of sauteed vegetables over the english muffin and serve....DELICIOUS!!
Makes 4-5 1-Cup servings
