Ingredients

Chana Dal, dried - SWAD brand is what I use, 1 cup
Water, tap, 3 cups total
Onions, raw, 1 small, diced
OVCO (organic virgin coconut oil), 1T
Red Roma Tomatoes, 2 diced
MDH Chana Masala Spice Blend, 1.5 tsp
4-6 curry leaves (optional)
Salt, .75 t (optional or to taste)
1 chili pepper, fresh or dried - split in 1/2 lengthwise (optional)
Directions
Measure out 1 cup of dried Chana dal (lentils) into a fine strainer & rinse thoroughly under running water to clean. Empty rinsed beans into a bowl & cover with 2 cups of water. Allow to soak for approximately 4 hours. An alternative to soaking is to prepare them in a pressure cooker.
When the dal is ready, heat the coconut oil in a 2-3 quart sauce pot. Add onion & saute until translucent.
Add in your Masala powder, curry leaves, chili pepper & salt & continue to saute for another minute or 2.
Add in the tomatoes & allow to simmer for approximately 5 minutes.
Add in your Chana dal & water. Bring to a boil, then lower heat & allow to simmer for approximately 30 minutes, longer if you wish for a thicker sauce consistency. To know the dal is ready, it should have a smooth creamy consistency when taste tested.
Serve with brown rice, or dosa. A serving of dal = 1 cup.
