These are sweet and delicious cakes that are yummy with or without syrup. This lower calorie recipe using Splenda and Egg whites to save calories.

Ingredients

    1 Large Sweet Potato mashed
    1.5 cup Whole Wheat Flour
    1 tbsp Baking Powder
    2 tsp Pumpkin Pie spice
    1/2 cup Splenda
    4 Egg Whites
    1 cup Water, tap
    1 cup 1% Milk
    1 tbsp Canola Oil

Directions

Chop sweet potato and biol in water in microwave for about 10 minutes. Drain and mash. Let cool while mixing all other ingredients. Mix in mashed sweet potato and mix.

Heat and lightly spray griddle or pan. ladle batter into 6 inch cakes. Makes about 10 six inch cakes, 2 per serving.
