Introduction

This is by far the best banana bread I've EVER made and tasted! I made several batches of different banana breads and had my husband and friends taste test them. Ingredients

    7/8 cup Garbanzo bean flour
    1/4 cup Bread flour
    1 1/4 tsp Baking powder
    1/2 tsp Baking soda
    1/2 tsp Cinnamon
    a pinch of Salt

    2 Egg whites
    a small portion of 1 Egg yolk (about 1/10 of the yolk)
    2 large Bananas
    1/3 cup Sugar
    1/4 cup Oil (I use Canola or Smart Balance oil.)

    1/2 cup Walnuts
    (optional, but the nutritional info. includes this ingredient)

Directions

Preheat oven to 350 degrees.

Spray one 8X4X2 inch bread pan with cooking spray. (I use Smart Balance.)

In a medium bowl, combine flours, baking powder, baking salt, cinnamon, and salt.

In a larger bowl, beat egg whites and yolk, then add bananas and mash together until well blended. Mix the sugar and oil into the banana mixture.

Pour the flour mixture into the banana mixture and mix well with a wooden spoon.

Using a spatula, pour banana bread mixture into bread pan and place in oven.

Bake for 40-45 min. (depending on your oven), or until a toothpick inserted in bread comes out clean.

Flip bread onto cooking rack and let cool for at least 5 min. before serving, or longer if storing in freezer.

Makes 1 bread, about 12 1/2 inch serving slices.
