Introduction

these turned into elf hats or popovers.. not sure why, too much protein maybe or too much baking powder. They have a very plain flavor, hence the name. Good for alongside soups when some added protein is beneficial. Ingredients

    1 Tbsp olive oil or coconut oil
    1 Tbsp unsweetened applesauce
    1 egg
    1/2 cup milk
    1 Tbsp honey
    1/4 teaspoon salt
    1/2 tablespoon baking powder
    1/2 cup whole wheat flour plus 2 Tbsp.
    1/3 cup protein powder
    1/4 cup flax seed meal

Directions

In a large bowl combine the oil, applesauce, egg, milk, sugar and salt. Mix it very well with a fork or wire whisk. Measure in the baking powder, protein powder and flours. Mix again until all of the dough particles are moistened. Do not over mix. Spoon the batter into 6 well oiled muffin cups. Bake at 400° for about 15 minutes. Remove from the oven and cool slightly before removing from the pan.
