Introduction

These are great for freezing and popping in the toaster to grab on the go. These are great for freezing and popping in the toaster to grab on the go.
Number of Servings: 10

Ingredients

    1 cup peaches: frozen, canned, or fresh
    2 tbsp flaxseed Meal (ground flaxseed)
    1 tsp Vanilla Extract, 1 tsp
    2 tbsp brown sugar
    1.25 cups whole wheat flour
    2.25 tsp baking powder
    1 tsp salt
    .25 cup egg substitute, liquid (Egg Beaters)
    1.25 cup non-fat milk

Directions

Blend dry ingredients. Blend wet ingredients in a separate bowl. Then combine.

Puree peaches in food processor. If using frozen, be sure to defrost first. Then fold peaches into batter mixture.

Makes 10 .25 cup servings

    these cakes came out really good. They were light and fluffy. I added some cinnamon for more flavor. The purred peaches didn't add much flavor to the batter. The next time I make these I will just add the peaches on top of pancakes - 10/2/13
