Ingredients

    For tofu: Squeeze out water, freeze, then thaw it, squeeze out excess water again, cut it into 1" cubes, and marinate the tofu for 3 hrs. in the soy sauce, rice vinegar, and 1 tsp. minced garlic.
    Heat 3 tsp. of the oil in a large skillet until very hot. Add garlic, scallions and remaining ginger and stir for 2 to 3 minutes. Add the rice, red pepper, edamame, corn, broccoli and tofu and cook, stirring, another 5 minutes. Make a 3" well in the center of the rice mixture. Add 1 tsp. canola oil, then add the egg and egg white (which you have beaten together) and cook until nearly fully scrambled. Stir the eggs in to the rice mixture. Serve hot. 4 - 2-c. servings, 470 calories each serving.
