Ingredients

    1 1/2 cups red Lentils
    2 cups cooked long grain brown rice
    1 lb. ground beef
    1 3/4 cups 2% Kraft cheddar cheese
    6 large green peppers
    1/4 cup Prego Spaghetti sauce
    1/2 red onion
    6 cloves chopped garlic

Directions

Brown ground beef with chopped onions and garlic. Drain. Meanwhile cook brown rice. Boil lentils in 4 cups water. Boil for 20 minutes, then drain. Mix together all ingredients except green peppers. Cut off tops of green peppers. Place green pepper cups in 9 X 13 pan. Fill the pepper cups with filling. Bake in 350 degree oven for 45 minutes. Remove and serve. You can sprinkle the peppers with additional shredded cheese during the last 5 minutes if you'd like.

I always have a lot of filling leftover. I bake it alongside the peppers and divide it into 2 servings. Those 2 servings plus the 6 stuffed peppers makes my eight servings.
