Introduction

This is a very low fat mango bread that was inspired after a trip to Hawaii. This is a very low fat mango bread that was inspired after a trip to Hawaii.
Number of Servings: 10

Ingredients

    In bowl combine:
    2 egg whites
    1/2 cup applesauce
    Set aside

    In a larger bowl combine:
    1 cup wheat flour
    3/4 cup splenda
    1/4 tsp salt
    1/4 tsp cinnamon
    1/2 tsp vanilla
    1/2 tsp baking soda
    1 generous cup of mashed mango's
    1/2 cup walnuts or macadamia nuts (optional)

Directions

Mix the wet and dry ingredients together and put into a greased loaf pan. Cook in a 350 degree oven for 50 minutes. Take out of oven when toothpick comes out clean. Place on wire rack to cool.

Makes 10-12 slices

    Incredible!
    This bread is absolutely phenomenal!!! I must admit that I didn't have any Splenda or applesauce on hand. Also only had 1 egg. I used 1/2c sugar, the equivalent amount of mango instead of applesauce, and 1 whole egg. I upped the amount of baking soda & added 1/4tsp baking powder to help it rise. - 6/16/12
