Ingredients

    1 chicken breast, skinless boiled
    1 onion sliced
    chcken stock
    can of hominy
    fresh cilantro
    red pepper sliced
    zucchinni sliced
    baby carrots sliced
    lime juice

Directions

boil tomatillos until they float

Saute sliced onions in chicken stock until soft.

Blend tomatillos, onions, cilantro in blender

Add blend and more chicken stock and zucchinni, carrots, chicken, hominy add water to get to desired level

cook until zucchinni & carrots are done

add red pepper & cook untl red peppers are as soft as you want

Add lime juice just before serving
