Introduction

If you love traditional Spinach salad, you will love this recipe! I use Blue Cheese as dressing but you can adjust to fit any preference. If you love traditional Spinach salad, you will love this recipe! I use Blue Cheese as dressing but you can adjust to fit any preference.

Ingredients

    8 C Baby Spinach, fresh
    4 T Oscar Mayer Bacon Pieces
    8 Egg Whites, hard boiled
    1/2 Red Onion, sliced
    5 Lg Fresh Mushrooms, sliced
    2 T Smart Balance Light Buttery Spread
    2 T Marsala Wine
    6 T Blue Cheese or Roquefort Cheese Salad Dressing

Directions

In medium pan, melt Smart Balance Buttery Spread. Add red onions and mushrooms to pan and saute until mushrooms release their water. Add Marsala Wine to pan and turn heat to Med/High to reduce.

In large mixing bowl add cleaned fresh spinach, egg whites, and blue cheese dressing. Toss until coated with dressing.

Layer spinach onto 4 plates, top with 1 T bacon pieces on EACH plate, and then layer with sauteed mushrooms and onions.
