Introduction

Ingredients

    3 oz. chicken breast (skinless), cut into 1/2 inch pieces
    2 tbsp. plain Greek yogurt
    1/2 tbsp. mayo
    1 tsp. sesame oil
    1 tsp. soy sauce
    1/2 tsp. five spice powder
    1/8 tsp. wasabi powder
    1/2 tsp. powdered ginger
    1/8 tsp. cayenne pepper
    1/3 cup diced red bell pepper
    1/4 cup diced cucumber
    3 scallions, diced (white and light green parts only)

Directions

Sprinkle the chicken pieces with 1/4 tsp. five spice powder and sautee in a small skillet over medium-high heat for 5 minutes, or until cooked through. Set aside to cool.

In a medium bowl, gently whisk together the yogurt, mayonnaise, oil, soy sauce, and spices. Taste this sauce and adjust the seasonings if you need to -- I like something a little spicier, so I usually use more wasabi.

Stir in the pepper, cucumber, and scallions, then gently fold in the cooked chicken.

Allow to sit in the fridge (or your picnic basket with an ice pack!) for at least 30 minutes before serving.

Makes enough for 2 sandwiches.
