Introduction

I changed this from a Ground beef and Beef broth to turkey and chicken broth soup. If you want the beef, just change the turkey for lean ground beef (same amounts as turkey) and the broth from chicken to beef (same amounts, low sodium) I changed this from a Ground beef and Beef broth to turkey and chicken broth soup. Ingredients

    1/2 lb. lean ground turkey breast
    1 cup chopped onion, divided
    3 cloves garlic, minced, divided
    2 tsp dried orgeano leaves, divided
    20 saltine crackers, finely crushed
    1 egg, slightly beaten
    1 Tbsp vegetable oil
    2 cans (14oz each) reduced sodium beef broth
    1 can (14-1/2 oz) stewed tomatoes, undrained
    1 pkg. (10 oz.) fresh chopped spinach

Directions

Makes 7 servings 1 cup each with 4 crackers
combine meat, 1/4 cup of the onions, 1/3 of garlic, 1/2 tsp orgeano in bowl. Add cracker crumbs, eggs. Mix well. Shape into 1 inch balls, set aside in refrigerator

Cook and stir remaining 3/4 onion, garlic in hot oil dutch oven or large saucepan on medium heat 3 to 5 minutes or unitl onions are tender. Add broth, tomatoes, with their liquid, and the remaining oregano. bring to broil slowly. Add meatballs reduce heat to low. Cover. Add spinach 10 minutes before done. Simmer 20 to 25 minutes or until meatballs are cooked through. serve with crackers
