Introduction

A nice, tasty way to get the kids to eat their broccoli. The cheese makes it a little bit "gooey". You could also add in cooked carrots, peppers, etc to this dish - depending on your tastes. Ingredients

    2 cups Minute Rice Brown Rice
    1 can Fit & Active (Lite) Chicken Broth
    1 cup Frozen Brocoli Florets
    1/2 cup Kraft 2% Mexican Cheese blend
    1/4 cup grated Parmesan Cheese
    2 TBS Parkay Cholestoral Free butter
    Salt & Pepper to taste

Directions

1) Cook Minute Rice according to package directions. Use chicken broth instead of water and measure out accordingly. (I always use the whole can of broth and just add a bit more rice.)

2) Microwave broccoli till done. Drain very well and slice into smaller pieces.

3) When rice is done, add broccoli, mexican cheese, parmesan cheese, Parkay butter, salt and pepper.

Makes approx. 6 3/4-cup servings

    Very Good
    In the interest of lowering the sodium content, I used the correct amount of water and a little poultry seasoning in place of the chicken broth. It turned out very well. - 8/30/10
