This is a super easy and delicious chickpea stew that my husband learned to make in Puerto Rico. Yummy over rice, too. This is a super easy and delicious chickpea stew that my husband learned to make in Puerto Rico. Yummy over rice, too.

Ingredients

    Chickpeas
    Green Peppers
    Garlic
    Onion
    Goya Sofrito Stew Base
    Tomato Sauce

Directions

Dice onion and green peppers. Saute the onion and garlic in olive oil until onion softens. Add green peppers for a few minutes, along with sofrito and 1 can tomato sauce. Simmer for 5 minutes.

Add chickpeas and 2nd can tomato sauce. Simmer for 20 minutes.
