    Eggplant, fresh, 1 eggplant, peeled (yield from 1-1/4 (remove)
    *Progresso Bread Crumbs - Italian Style, 1 cup (remove)
    Egg, fresh, 1 large (remove)
    PAM- to coat the pan


Peal and slice egg plant into 8 inch slices.

Salt the egg plant for about 30-60 minutes to draw out water.

Once that is done rince the eggplant.

Coat the eggplant in eggwash and dip into breadcrumbs.

Place eggplant in oven pan that has been sprayed with PAM to prevent the eggplant from sticking to the it.

Bake at 350 for about 30 minutes.

Half way through make sure you flip the eggplant.

I use this to make eggplant sandwiches. Even the kids like it :)
