Number of Servings: 6

Ingredients

    2 cups pearl barley
    4 cups chicken broth (or vegetable to make vegetarian)
    2 tsp olive oil
    1 onion, chopped
    1 tbsp minced garlic
    Pepper to taste
    Any other spices to taste (I like thyme myself)

Directions

Makes approx 6 1-cup servings

Sauté onion and garlic in olive oil in large saucepan
Add dry barley, toasting in oil until slightly browned
Add 4 cups water or broth, turn up heat until water reaches a boil.
Once boiling, cover and let simmer until all the water is absorbed
Add choice of spices once barley is almost cooked
